Louis, you are asking the "one million dollar question" . Many, many years ago, when =caravans were smaller , cars bigger, it was told that you could "straighten" a rig, with your Ford V8 and 354 cubic inches motor, I don't know.
I DID NOT SEE THE VIDEO, just commenting on experience.
You will get viewpoints on this for sure, I won't disagree or agree. Most probably the guy at Camp World had the best training/answer that could be given. I want to know Why It Happened??? Surely you will get the situation when you are passed by large truck, your rig will give way and the truck's displacement of air will shove you, and it is better to keep steering straight, and just hold it for a few seconds.
If you get the same effect from oncoming traffic, you will also get that "push: of air, and you hold tight. I had, by using a "Drag Foiler" on the car's roof, bypassed that fenomanen? (spelling) and that is one of the reasons why I used the "foiler" for many, many years. Still have one in the garage!! although I am in the process in cleaning up, will put it up for sale some or other time!!!
BUT, your question in hand, I cannot see how anyone can go on the road without knowing that you NEVER pass any vehicle with you rig in the "waltzing mathilda" position.
Perhaps you must post the url for that video, maybe we can see more, and perhaps my comment is out of line!!!!!
In theory, if a person tows at a safe speed, with stabaliser, and the weight in the caravan is correctly packed as well as a suitable vehicle, the chances are minimised of this happening. I would like to at least have a good idea of what to do if it does happen.

Let me know if it doesn't work.

V8 enjin, swaar voertuig, dubbel-as wa.
Ek sal probeer loer, en indien nodig, my raad/kommentaar aanpas!!!
Nou maak ek myself seker kwesbaar vir andere!!!!!! EKSKUUS!!!

It happened to me on a straight road when i was VERY new to caravaning.
I held that steering wheel so tight my vingers were sore, i took my foot of the accelarator and kept trying to just steer the car straight, i will lie if i said its just a case of relax and keep your cool.
If your towing vehicle does have the power and you have the space to accelarate and you are not already overspeeding etc, then try to pull out of it.
All i can say is do try and stay calm albeit that is not so easy, we do need to overtake at times, but wait for a safe place to do so do not try and overtake and twice the speed of the vehicle you want to overtake, rather go for max 20kph faster than the vehicle to he overtaken.
RATHER BE PATIENT AND BECOME A PATIENT or worse.
This is my opinion only, hooefully someine eho has done an advance drivers course can help with better advice.
I woukd like to attend such a course.
I just watched that video clip, one can see that the towing vehicles brake lights came on after a few sways, imediately after that everything went totally out of control.
Hitting the brakes escalates the effect. In my opinion, this driver was also going to fast.
With the towball stabilizer from AL-KO fitted though, i towed thousands of happy towing passing trucks whenever i want ...i.e. downhill and uphills because my towing car has enough torque (560 NM)as far as i'm concerned. I do however only tow at maximum speed of 110 km/h and when passing maybe 120km/h depending on the situasion.
I would therefore recommend "foot off excellerator and foot away from brake pedal" along with an anti-sway mechanism just for that "in need" assistance!
Hoe meer terugvoer mens kry hoe beter, wanneer jy in so situasie kom, is dit so dat bewusyn van raad jou tog help. My skoonpa het vir my geleer wat om te doen as jy so iets oorkom, en sonder dat ek dit besef het, is dit presies hoe ek opgetree het toe daai swaai my tref.
All concerned, I watched the video, and, the first comments flashing stating "the wind . . . "
I have experienced same when I had a motorhome, and a few occasions with caravan. You can get that either passing a truck combination like this instance, or from oncoming traffic.
Unfortunately there were no grass or bushes alongside the road to demomnstrate the force of the side winds. As I can work out, as this guy passes the truck, you move into a complete "side wind"less" state, the truck is absorbing all the wind (in this case blowing from the LEFT, and as he completes the overtake, when the wind hits the van from the left, the stability is gone. (With my experience with TRAPEZIUM, it would have helped a lot!!)
I don't think he would stand a chance in "pulling it straight" unless he was driving one "moerse" strong vehicle. Point.
If ever you go on the road, PLEASE look at the "tell-tales" as you drive, LOOK at the grass on the side of the road, it will tell you a story. Look at truck/trailer as you drive up to it from the rear sometimes you will see it leans over to the right/middle of the road, with strong wind from the left side. BEWARE, you ae going to land in that "LUGLEEGTE" if you pass, first it is going to "suck you in, and then spit you out on the other side.
I ALWAYS used a "Drag Folier" on the tow vehicle's roof, and travelled to a quite a few places!!!, and I think the use of that, as well as the Trapezium, made one hell of a stable rig. When we started caravanning, (very early 80'ties) all these tests and testimonials were done and published in the Caravan & Outdoor, and I saved the books, read them again, hence the knowledge obtained, and the actual using and modifying of whatever I wanted to use, to make it work for my own situation.
Bottom line, be careful, be alert, there are other elements on the road these days that are just as dangerous, they call it Taxis, and therefore be extra careful!!!
Skuus Pieta...ek sien nou eers jy gaan Leentjiesklip toe vir daai lekkkkkeeeerrrr krewe!!!
The reason I had that fishtail effect was stupidity and nothing else.
I was driving at about 90kph, and started to wind down my window, and in the process, I jerked like a jerk on the streering, which resulted in the fishtail.
I think most of us if not all who tow a caravan has had a fishtail episode, some worse than others I also hold the wheel and take my foot off the accelerator. and as previously stated in this string, the heavier the tow vehicle the faster the correction.
